Flower Cake Recipe & "En Cuisine avec Alain Passard" by Christophe Blain


This is a cake inspired by - stolen from! - Alain Passard's "La Tarte Bouquet de Roses".
Alain Passard is a French chef and he invented this beautiful apple tart where the apples look like roses.
I discovered this very uncommun chef with the comic "En Cuisine avec Alain Passard" by Christophe Blain. He runs the high gastronomy restaurant L'Arpège, and is eager to enhance fruits and vegetables's flavors.
Mr Blain in one of my favorite comics artist, he's a genius. Now, I'm reading his "Quai d'Orsay" and I'm thrilled by his talent. I'll do another post about him soon.
To get to the point, first, I had this esthetic idea I wanted to reproduce but this recipe is a secret of course, so I just re-created the look, and improvized with what I can do.

The "tekito" recipe ("tekito" in japanese means 'messy') because:
the proportion I give here are approximate, I'm never precise when I cook, always changing/adding ingredients and portions... Please adjust to your taste, sweeter or less, and your mold's size ;)

Ingredients for a tiny mold (for 2 persons) - peeling the apples in garland is loooong, let's make it fast and efficient!
  • Approx. 3 red tasty, sweet, a bit juicy apples with thin skin!
The doe:
  • 125 gr flour (you can use as you like whole wheat or white or mix both)
  • 70 gr soft butter (soft, but I'm sure if you put some salty butter it's good too!)
  • 2 tablespoons sugar (white is better buuuuut I use super brown sugar sometimes)
  • 3 big pinches salt
The cream:
  • 20 cl whipping cream (NO low fat please)
  • the yellow of the egg
  • 2 tablespoons sugar (white is better)
Pre-heat your oven 200°C.

Make the doe: in a jar, put the flour, mix it with the salt, the sugar and add the butter: mix everything with your fingers gently.
Turn everything into a ball.
Spread butter in your mold and put some flour everywhere so the doe won't glue.
Compress the doe in the mold with your fingers again.
Put in the oven to pre-bake the doe.
10 min in hot oven (200°C).

Make the cream: in a jar, put the cream, add the sugar and the egg yolk then whisk everything nicely.
Leave it aside.
Don't forget the doe in the oven!

Wash your apples very well.
Use a potato peeler and peel all the apples so you have beautiful long garlands :)
Make the flowers by creating spirals with the apples' skins. You have to make enough flowers so it cover all the surface of your mold. If not, peel more fruits.
Then, slice thin pieces of one of the peeled apple.
Apples left overs are... for another apple recipe? ;)
In the mold and the pre-baked doe: put the little pieces of apple on the bottom, then organize your flowers on top of it, they need to stick together and be at the same level as the mold.
Then pour the cream delicately over the flowers. It shouldn't go over the apples!

Put in the oven, not too hot, like 140°C for approx. 30 min or more.

What is interesting and surprised me, is that the skin is good to eat and the apples "inside" were well cooked, not crunchy at all!
That's why it's very important to have good apples: not hard or acid.
I guess also, it's important to have a thick ceramic mold so it bakes homogeneously and softly.

私はこのたぐいまれなる素晴らしいシェフをクリストファ ブラインChristophe Blainのコミック
"En Cuisine avec Alain Passard"によって知りました。
彼のレストラン L'Arpègeではフルーツや野菜の風味を引き出す事を大切にしています。


ブラインは私の最もお気に入りのクミック作家の一人で、間違えなく天才です。
今は彼の他の作品"Quai d'Orsay"を読んでいる最中で、
彼の才能にまたわくわくさせられています。
彼に関してはまた近いうちに別の記事をアップしたいと思っています。

で、まずポイントをおさえてこの美しいアイデアを取り入れて自分なりに作り替えたかったんだけれど、もちろん彼のレシピは彼のもの。

だから私は見た目をちょっと変えて、自分らしくできるかどうかで考えてみた。
でその結果、ここで紹介することにしたのは、
私の"テキトー"レシピ(みなさんご存知のテキトーは悪い意味ばかりじゃありませんね)
私はいつもレシピのとおりに正確につくることはなく、いつもテキトーに分量を変えたりします。
大体いつも”目分量”で。
細かい調整はどうぞ皆さんのお好みで、甘さを加減したり、型のサイズにあわせたりしてくださいね ;)


小さめサイズの型用の分量(2人分)
リンゴのブーケ作りに時間がかかります、素早く効率的に行いましょう。 

赤い甘めのリンゴ 約3個(水分が多め、皮が薄めのりんごがおススメです。)

生地:
•125g 小麦粉(おこのみで全粒粉、全粒粉との普通の小麦粉ミックス等も使えます)
•70g 柔らかいバター(有塩バターでもおいしくできると思います!)
•2 テーブルスプーン(少し大きめのスプーン)(普通のお砂糖がいいですが、私は黒砂糖を使います)
3つまみ 塩

クリーム:
•20cl ホイップクリーム(低脂肪ではない)
•1 卵の黄身
2  テーブルスプーン(白いお砂糖がおすすめです)

オーブンをあらかじめ200に設定してあたためておきます。
生地を作ります:
ボールに小麦粉、塩を入れ軽く混ぜ、お砂糖とバターをいれて、手で優しく混ぜていきます。
型にバターを塗り、全体に小麦粉を振りかけ、型にくっ付かないようにします。
生地を型に入れて押し付けます。
オーブンに型ごと入れてあらかじめ生地だけ焼きます。10分間(200℃)

次にクリームを作ります。
ボールにホイップクリームを入れ、お砂糖、黄身を入れ、泡立て器できれいに泡立てます。
できたら置いておきます。
ここで、オーブンに入れた生地を忘れないように!

リンゴをよく洗います。
皮むき器を使ってリンゴの皮を剥きます、この時きれいに長く剥くときれいな花びらが作れます :)
剥いた皮をくるくる巻いて花びらを作っていきます。
型の表面がすべて覆われるまで、作った花をのせていき、足りない場合は更にリンゴの皮をむき、
作り足します。
そして、皮をむいたリンゴの一つを小さく薄切りにします。
他のリンゴは…なにか他のレシピに使いましょう ;) 

あらかじめ焼いてある生地の上に小さく薄切りにしたリンゴを並べ、その上にお花を並べてます。
型の高さと、リンゴの表面が揃うようにていねいに並べます。

そしてクリームを、リンゴの上から静かに流し入れます。
この場合クリームで花びらが隠れてしまわないように!

これをオーブンに入れ、熱すぎてしまわないように、約140℃で30分焼きます。場合によっては長めに。

とても興味深くびっくりしたのは、リンゴの皮がとてもおいしく柔らかく焼けていて、
中に入れたリンゴもしっとりしていて、全然サクサク感が残らなかったこと!! 
あと、均一に柔らかく仕上げる為には、厚めのセラミック製の型を使ってじっくり焼くことが重要かも。
なのでリンゴを選ぶことがまず重要なようです。固くなく酸っぱくないものにしましょう。

  1. j'aime beaucoup la BD de Blain sur Passard, même que je ne l'ai pas finie pour m'en garder un peu pour plus tard ;) j'aimerais tellement manger un jour à l'Arpège !
    et Quai d'Orsay je suis fan, j'ai commandé le 2e tome la semaine dernière ;))
    c'est toi qui a fait cette jolie découpe de pommes ?

  2. On est donc fans toutes les deux ;0 moi aussi, je veux le 2ème tome!!!
    Je crois que c'est abordable l'Arpège à midi non?
    Et oui, les fleurs, j'ai spiralé comme une malade mais en fait, t'as pas à faire ça ultra bien et ça rend bien quand même!

  5. j'ai encore avancé dans la BD de Passard (mais je me réserve encore qq planches), et je comprends pourquoi ta tarte est si jolie ! c'est la fameuse tarte "mystère" ;) a-t-il réussi à la commercialiser congelée finalement ? il va vraiment falloir tester son resto un de ces 4…

  6. ahaaaa... si tu te gardes encore quelques pages de la bd, alors je ne dis rien... ;)
    Et je fais exactement comme toi, je m'efforce de lire toujours très lentement les ouvrages qui me plaisent ou même en musique, je me garde des trucs inconnus pour plus tard!
    merci pour le compliment, j'ai essaye de la refaire pour Noël, mais les pommes que j'avais achetées étaient impossibles à pratiquer. Dommage!!!
